The Healthy Red Meat

Tips For Cooking Emu Meat:

Emu meat has similar characteristics to extra lean beef. There are also some differences.

Emu meat will be very dark with no marbling in the meat. All fat is deposited as a layer between the meat and the hide.

When properly processed, the meat will not have any fat even on the outside of the cut.

Emus also have a connective tissue that lies between the muscles that is called "silver skin".

This silver skin can form a tough rind on the meat when cooked that is undesirable to most customers.

Our meat has the silver skin removed.

Since Emu is low in fat, it does not need to be cooked as long and with as high a temperature as most other meats.

Do Not Rush the Cooking Process!!!!
